Black Bean and Cilantro Wrap
Last week we tried a new recipe for lunch. The kids absolutely loved this. Not only did we have it for lunch twice last week, but we got more cilantro and made another batch for dinner because the kids wanted Dad to try it out as well!! I call that a winner!! What I also loved is that it takes under 10 minutes to prepare from start to finish!
Ingredients:
- One can of black beans, rinsed well
- Chopped fresh cilantro (we used about 1/4 of a cup or so)
- 1 or 2 tablespoons of chunky salsa
- 1 cup of frozen corn (or so, I just dumped it in)
Mix the ingredients above together
- grated Mexican cheese
- tortillas
Place a tortilla in a non-stick frying pan. Sprinkle grated cheese and spoon the bean-cilantro-corn mixture on top. Heat on medium-high for a few minutes (until it starts to brown on the bottom and cheese start to melt). Fold in thirds and then flip the wrap over to heat for another minute or so.
Eat immediately while crunchy and warm!
The extra bean mix can be placed in the fridge to be used another day.
We also tried this with re-fried black beans. We liked that as well, but definitely preferred whole beans.
